Tadd Cortell was born and raised in New York City but found his home in the culinary world of San Francisco 12 years ago. There he started off at 42 Degrees, Boulevard and Palio D'Asti before becoming a manager and wine consultant at numerous properties including Backflip, Bacchus and Butterfly, where he received a Wine Spectator Award of Excellence for his work. He also acted as the head of wine education for the Joie De Vivre Corporation for four years.
In 2002 Tadd acquired his first restaurant property, and with the help of two partners, created The Public restaurant under the premise that the "public" could walk in and enjoy quality wine and food at an affordable price. Ready to raise the bar, in 2004 he partnered with Pamela Busch in the launching of CAV Wine Bar. Here, as general manager he fine tuned his operational philosophy: the staff is hand picked, the kitchen uses only fresh and seasonal ingredients, and the aesthetic is modern and inviting. All this centers on a wine program that is global, exciting, and most importantly, affordable.
